Prepare Mangoes Peel and dice the mangoes into small cubes. Set aside a few pieces for garnish.
Sweeten the Yogurt In a bowl, mix Greek yogurt with honey and vanilla extract. Stir well until smooth and creamy.
Layer the Parfait In each serving glass or jar, layer 2 tablespoons of yogurt, followed by mango chunks, then 2 tablespoons of granola. Repeat layers as needed.
Garnish and Serve Top with remaining mango cubes, a sprinkle of granola, and a mint leaf if desired. Serve immediately for crunch, or chill for 10 minutes if you like it colder.
