Healthy Cauliflower Fried Rice

1 Spatula
- 1 cup Cauliflower rice
- 1/2 cup Brown rice
- 1/2 cup Carrots, diced
- 1/2 cup Green peas
- 2 Eggs, beaten
- 2 tbsp Low-sodium soy sauce
- 1 tbsp Sesame oil
- 2 cloves Garlic, minced
- 1/2 tsp Ginger, grated
In a skillet with heated sesame oil, sauté the ginger and garlic for one minute.
Cook the peas and carrots until they are tender.Add cooked brown rice and cauliflower rice and stir.
Scramble the eggs in a well created in the middle.
Stir-fry for a further five minutes after mixing everything and adding the soy sauce.
