Lemon Herb Potato Salad (No Mayo)

- 4 medium Red potatoes, boiled and cubed
- 1/4 cup Red onion, thinly sliced
- 1 tbsp Olive oil
- 2 tbsp Lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp Chopped parsley
- Salt and pepper to taste
Drain and allow to cool after boiling potatoes until they are fork-tender.
Mix the mustard, lemon juice, olive oil, salt, and pepper in a bowl.
Add the dressing to the potatoes and onion.
Add parsley as a garnish and serve cold or warm.
