Ingredients
  

  • 4 medium Red potatoes, boiled and cubed
  • 1/4 cup Red onion, thinly sliced
  • 1 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp Chopped parsley
  • Salt and pepper to taste

Instructions
 

  • Drain and allow to cool after boiling potatoes until they are fork-tender.
  • Mix the mustard, lemon juice, olive oil, salt, and pepper in a bowl.
  • Add the dressing to the potatoes and onion.
  • Add parsley as a garnish and serve cold or warm.
